Keeping The Season Light -- Garlic Potatoes

Ingredients:

  • 1 lb. new potatoes, or the smallest you can find
  • 1 tsp. olive oil, or enough to cover the bottom of a casserole dish
  • 4 cloves garlic, peeled and thinly sliced
  • 1 Tbsp. minced yellow onions
  • 1/8 tsp. salt
  • Freshly ground pepper to taste
  • Garnish with chopped fresh rosemary or parsley (optional)

Preparation:

1. Scrub potatoes well. If they're large, cut into slices. Steam for about 7 minutes or until they are firm but slightly tender.

2. Pour oil into a casserole dish. Add the steamed potatoes, garlic, onion, salt and pepper. Toss to mix well.

3. Bake uncovered in a pre-heated 350-degree oven for 30 minutes. Stir a couple of times to cook potatoes evenly.

4. If desired, garnish with freshly chopped rosemary of parsley.
